Cabbage Stir-Fry

I bought a bag of shredded cabbage from Trader Joe’s to make cole slaw. I never got around to making the coleslaw but I have been using the cabbage for some easy stir-fry.

This is an easy and quick dinner. It’s my go to quick dinner these days.

I use coconut oil when I cook, including stir-fry dishes.  I saute onions first then mix in shredded carrots and cabbage together until cooked. I add salt, pepper and garlic powder. Sometimes I add stir-fry sauce to the veggie mix or I add egg whites to add protein.

I like to add tofu on top of my stir-fry. I cut firm tofu in cubes, then fry them in coconut oil. (After I took this picture, I had to drain out the coconut oil because I put too much)

Once the tofu are cooked on both sides, I lower the heat and add Trader Joe’s stir fry sauce for flavoring.  Stir for a minute or until the tofu has absorbed the sauce.  It’s hot and spicy.

Voila! Quick and easy stir fry.

For this stir-fry, I added edamame instead of egg whites. You can add more vegetables to your stir-fry. I just try to keep mine simple on week nights.

    It looks delish and I bet the coconut oil lends great flavor to the tofu!

    • I actually do not taste the coconut in the oil at all, it has a neutral taste to me. I’ve been using coconut oil for awhile now, so maybe I’m used to it.
