I don’t want summer to end yet. I still want to spend time at the beach or have a bonfire…but this week it feels like Fall is coming on too fast.
I woke up at 6am and today it was completely dark. Fall is here.
I usually wear my running shorts for my morning runs. Today I had to wear my running pants. Fall is here.
In the summer I don’t use the gym because I would rather run outside and feel the fresh air against my face but today I worked out indoors at the gym. Fall is here.
My bowl of oatmeal rekindled with it’s seasonal friend Pumpkin. Fall is here.
Yogurt and Pumpkin joined my normal bowl of oats.
- 1/2 Cup oats
- 1/4 Cup pumpkin puree
- Topped with coconut nuts granola, greek yogurt and Trader Joe’s Sunbutter

It was too filling and I couldn’t finish it.
Made a trip to Costco today to re-stock our fridge. We were in serious need of fresh produce and fruits.
Did you know it’s Christmas at Costco already? Seriously?

I am still mourning over the quick passing of summer and adjusting to the changes Fall season brings. How about Halloween and Thanksgiving? Is there room for them in your store?
I would love to celebrate them too. Please don’t rush me!!!

I left Costco with my usual loot.
Old fashioned oats = breakfast, baking, granolas and making oat flour.
Salad. Cucumber. Bell Peppers.= greens everyday for lunch
Cheese = eaten as snack with celeries, crackers and cheese spread for lunch wraps.
Strawberries = oatmeal toppings, yogurt parfait and strawberry chocolate cupcakes.
Ripe bananas for baking.
I watched a Blendtec demonstration.
While I was debating whether to get Vitamix or Blendtec, I enjoyed samples of the fresh smoothies.
It was good but I told myself that I should walk away before I grab a box and come home with a $350+ blender.
After we finished unloading the groceries, I munched on the red sweet peppers right away. So sweet and crunchy. Are you sure these are vegetables and not fruits?
What kind of vegetables do you to like munch on? I’ve been hooked on sweet bell peppers ever since my first crunchy bite. I like to dip it with hummus too. Carrots, sweet bell peppers and cucumber are my go to veggies when I just want to snack mindlessly.
I love pumpkin but I don’t know how so many people eat it without any extra sweetner of some sort. It tastes so bitter to me without stevia or honey. As for veggies, I prefer my peppers roasted, but carrots and cucumbers are my staples for dipping or eating all by themselves. They remind me of summers in the country.
I agree. I usually mix pumpkin puree with something sweet like when I am baking. For this bowl of oats, it was the last batch of my granolas which means the sweeter portion had accumulated at the bottom of the jar. So it was plenty sweet for me.
But I would advice someone to add sweetener to the pumpkin if they are trying it for the first time.

Yup, not just Santas but a whole aisle of Christmas wrapping paper and ribbons. Christmas tree decorations and lights. Crazy!! I don’t really want to think about Christmas yet.
I love that fall is here! But I’m with you on getting frustrated seeing Christmas stuff. That always drives me crazy. People need to wait until after Thanksgiving!!

I cannot believe that big Santa. I was at Macy’s over last weekend and they were setting up their Christmas trees and ornaments! I couldn’t believe it!

Fortunately our mall doesn’t have Christmas decor yet only Halloween costumes for now.

I’ love fall, it’s my favorite time of year…until spring rolls around.
Hope you find pumpkin soon since it’s back in season. I’ll probably stock-up for the rest of the year too since I like using pumpkin puree for baking to replace oil/butter.
That’s crazy that Santa is already up at Costco! Don’t get me wrong–> I’m definitely an EARLY celebrator of holidays… but I think Halloween would be appropriate first! 😉
I’ve been LOVING the weather in Southern California lately! Cool enough to run in the mornings, but still warm enough for me to enjoy the pool in the afternoon! I’ll take it! I’m really excited to start eating more squash, too!!

I agree with your comment on the whole Costco thing. I went there the other to get some house supplies and noticed a whole aisle of Christmas toys and decorations. WHAT THE HECK!? Don’t get me wrong, I love Christmas, but eh! It’s too early and I don’t even want to think about spending the money for Christmas, yet. hehe.
Did those sweet peppers from Costco? I’m going to have find those. They look delicious! My fav veggie to munch on would have to be asparagus. mmm!

Yes, Costco sells mini and regular size sweet bell peppers. I like switching between the two. I got the big ones this time because I’m planning to make stuffed bell peppers this week. If you can stand being in the refrigerated produce section at Costco, try looking for it and hope you like it.
Pumpkin is enough reason to embrace fall! I hope you’ll have a beautiful weekend with lots of time for extended pumpkin oat delights!

Ack, Christmas is way too early! I hate how they keep pushing them earlier and earlier so they have more time to sell us cheap crap! haha The thing that creeps me out is when they have candy for sale – how long is that going to sit on a store shelf until somebody buys/eats it?
My go tos for munching are bell peppers and carrots. The boyfriend likes cucumbers, but they’re not the top of my list. We’re also huge fans of dipping them in hummus!! Best way to eat a veggie!
