Colorful foods

How is hump day Wednesday treating you? Thanks for all the comments on the last post about Halloween at Disneyland. It’s really festive and beautiful right now at Disney. If you have the opportunity to go, I would suggest making time for it.  And if you can’t go, I’ll take more pictures and share them with you so you can enjoy Disney virtually and not feel left you.

I love colorful food. Sometimes I eat with my eyes and sometimes I eat with my stomach but definitely there are days when colors attract me to the food.

Case in point, my breakfast this morning. Check out the colors.

Who says eating healthy is boring and dull? Not in my kitchen 🙂

This bowl of oatmeal was filled with sweet strawberry goodness.

  • 1/3 cup old fashion oatmeal
  • 1/2 cup water & 1/2 cup almond milk
  • 2 scoops of Sun Warrior Vanilla protein
  • 1 tbsp of pure Maple Syrup
  • 1.5 Cup of fresh strawberries
  • 2 tbsp of Coconut granola

Lunch was tuna salad on a bed of lettuce, sprouts and tomatoes. RED is  the color theme of the day with my food.

Dinner will be more colors.

Stuffed bell peppers that received raves and thumbs up from picky eaters in the household.

I’ll post recipe soon. This is a must try. The fiance doesn’t really like roasted peppers and he has requested to keep this in our dinner recipe rotation.

Hope you are having a wonderful week. It has cooled down a lot in Southern California. I’m looking for ways to stay warm like baking and drinking hot chocolate at night 🙂

What kind of food keeps you warm during cool nights? I  like drinking hot chocolate or hot teas. Cool nights also gets me in the mood to bake too 🙂

P.S. if you like Larabars like I do, I saw them on sale at Ralph’s for $1 each. I bought a few last night and replenished my emergency snack stash. I sent out tweets this morning and shared the bargain.

    I really enjoy hot drinks when the weather gets cooler – nothing like snuggling up on the couch with a good movie, a blanket, and a warm mug of hot chocolate when it gets cold!!!!

    You had stuffed bell peppers tonight, too!?! My mom and I actually used green bell peppers sliced, mixed with hamburger meat, rice and tomato sauce. We only make this recipe during the cold season. I love it!!!

    During cold chilly days, I love to turn on the fireplace, light some fall scented candles (Pears), and cook some Italian soup on the stove. 🙂

    • I usually vary the peppers I used when I cooked stuffed peppers but I bought a bulk at Costco and the bag only had red ones.

    I’m excited about hot chocolate weather, too! (and trying to curb my urges to bake until holiday cookie time–> otherwise I’ll be the one doing ALL the eating of them!)

  4. BEAUTIFUL eats. Stuffed peppers are the best. I agree -healthy food does not (in any way) need to be boring!! I like drinking decaf coffee at night. mm mm mm- with a little almond milk & stevia. Its still in the 80’s in SC, but I’m not ready to let go of summer yet

    • Hi Erica, yes, hang on to summer as long as you can while you still have it. It has cooled down a lot where I live. I actually wore a scarf at Disneyland this week.

  7. I’m in your boat… I make my food as colorful as well! Especially my salads. It’s pretty… but I also heard once that you want to get as many different natural colors in your food as possible, because then you’re getting all the different nutrients and stuff. No idea if that’s true, but it kind of makes sense!

    • I read that too. I try to eat a variety of colors in my meals to cover all my basis with the nutrients and then I have some days where I don’t eat veggies at all and I just take vitamins to compensate.

  8. Roasted peppers are so delish! And I’m all about colorful foods too — I usually rate my healthiness on how diverse my colors are 😉

  9. love a thick veggie chili on cool nights. I never remember to stuff bell peppers, I tend to only remember poblanos for some silly reason.

      I’ve made stuffed poblanos before but I filled it with cream cheese and wrapped it with turkey bacon. It’s a crowd pleasing appetizer 🙂

  10. that tuna salad looks awesome, i’m headed to trader joes and will have to pick up some tuna now! 🙂 your roasted peppers look good too, can’t wait to check out the recipe when you share it! i’m always looking for new dinner recipes, i feel like i’m always making the same ol’ stuff.

    • Hi Sunny,

      I can eat tuna everyday and not get sick of it for a week. I always keep cans around for quick meals. I like mixing tuna with chopped bell peppers, celery or carrots for more volume and crunchy texture.

  12. I’m a huge fan of the hot tea during cooler nights. Granted, I’ll drink it in the summer, but it’s enjoyed twice as much in the fall and winter… 😉

    Your stuffed peppers are so pretty. It’s funny, the few times I’ve made stuffed peppers, I don’t cut them in half but just cut off the top and leave them upright. Your way looks much easier 😉

    At night I love drinking herbal tea! There is a particular brand I am addicted to but it’s only available in the UK. I need to find a dealer!
