My sister Janell baked some tasty cupcakes this week and she sent some my way. She knows a few things about cupcakes, she used to work at Frosted Cupcakery in Belmont Shore.
It’s so nice to have another baker in the family 🙂 It feels great to come home and have baked treats waiting for you.
These green goodies are tasty. You can taste a hint of the green tea in the cake but it’s not too strong. The toasted coconuts blends well and compliments the buttercream icing.
Here is the recipe that she shared.
Green tea cupcakes + green tea coconut buttercream with toasted coconut (recipe adapted from here)
Green tea cupcakes
2 sticks of unsalted butter (room temp)
2 cups of sugar
2 large eggs
2 large egg yolk
3 cups all-purpose flour
2 tablespoons of organic green tea powder
2 teaspoons of baking powder
1/8 teaspoon salt
1 cup of hot/warm soy milk
1. beat butter about 30 sec
2. add sugar. beat until light and fluffy, about 3 min
3. add eggs/egg yolks one at a time, beat for 30 sec between each item
4. whisk together flour, baking powder, and salt in a bowl, add to batter and mix to combine
5. mix organic green tea powder with hot/warm soy milk then add to batter and mix until combine
6. pour into cupcake holders and bake for 20-25 minutes
Green tea coconut buttercream
1 stick butter (room temp)
1 box (3 1/4 cups) of powdered sugar
1 tablespoon of organic green tea powder
2-3 tablespoons (or until frosting consistency) of hot/warm coconut cream
1 pack of sweetened coconut flakes (toast in oven until crispy or light golden brown)
1. beat 1 stick butter for about 30 secs
2. mix organic green tea powder with hot/warm coconut cream, add to butter
3. add powdered sugar to butter and green tea powder/coconut cream
4. pinch of salt
5. beat until smooth
Once cupcakes are baked & cooled, frost top of cupcake and roll top into toasted coconut, repeat for rest of cupcakes.
***makes about 20-22 cupcakes****
I have some ideas that I want to try to make this recipe healthier. I want to recreate this cupcake using less sugar and butter. The green tea cupcake is new for me and I definitely like it.

Using matcha powder can get a little addicting doesn’t it? Smoothies, baking and green oatmeal anyone? lol
So so gorgeous! I love the toasted coconut on top. I bet you will do a rocking job lightening these up.
I will have to try hard. They are perfect the way it is, but I just like it with less sugar for my taste.

Lea, did you know that i LOVE anything green tea? did you use matcha? that’s my favorite ingredient to work with. these cupcakes look delicious! I love the massive amount of frosting that you used.
My sister baked the cupcakes and she used organic green tea powder, so not exactly labeled matcha but it taste the same I think 🙂

Bianca, never had these two combo either on any food. I’m glad I got to try it first with cupcakes, they were delicious. I suppose a matcha tea with coconut smoothie would taste good too?
