It was raining all night last night and all day today. It was really cozy inside the house and the perfect day for baking 🙂
I was planning to eat breakfast burrito today but since I woke up with rain outside, I did a switcheroo and ate my usual breakfast lately, protein oatmeal with melted peanut butter topping.

Before I headed to the gym, I wanted to prep the dough for the sugar cookie I was planning to make for our holiday party tonight, because it had to be chilled for one hour.
I had high hopes for this dough. It was my first time baking sugar cookie from scratch. With the recipe having great reviews, I was very excited to make it.
Body Pump class was really fun today. We had new teacher that really pumped me up. She said things like:
“Feel the burn. It’s ok, you’ll live”
“I love feeling the burn, because I know that it’s doing something good for my body”
“Don’t you love Body Pump? It’s a class where you forget about your burning triceps because you are too busy moving on to your abs” (So true…)
I worked my butt off today, I can tell I’m getting stronger because I’ve increased my weights. I definitely felt the burn.
After the gym, my attention was right back to the sugar cookie. But first, let me show you my holiday baking station.

Cookie tins and shipping supplies.
After the cookie dough chilled for 2 hours, I rolled 1/2 half of the dough on flour, sandwich between two parchment paper.
Then…this is when things went wrong for me.
My dough was really soft and sticky…and would not hold the shape where I could pick it up. Or it could be a combination of the cookie cutter I was trying to use. I got from Disneyland and I think it’s a pancake shaper and too big to be a cookie cutter.
Anyways, my plan B was to cut around the shaped dough and pull away the extras, just so I can have my Mickey Mouse shaped cookies.
This was a pain the butt, but they came out pretty 🙂
So after 8 Mickey Mouse shaped cookies, I decided that I was taking too long and used the rest of the dough to make regular cookies. I had to make another dish for the party.

The cookies do taste great, it taste like the sugar cookies you buy at the mall. Soft, chewy, buttery and sweet. It was just hard to handle it you are trying to make shaped cookies. I did try to chill the dough longer, but the outcome was still the same. Next time, I will try to chill the dough overnight.
The other dish I made was veggie bars.
I’ve made these a few times now, and it’s always a crowd pleaser. I think even veggie haters will love this dish. The secret is the dough and ranch cream cheese dressing.
I will share the recipe soon, once I have the time to type it out. I highly recommend it and it’s a must try 🙂

It’s almost dinner time and our party guests should be arriving soon.
All holiday decorations are lit now. I feel the Christmas spirit even more when I’m surrounded by plenty of lights.

I’ve never seen a recipe like those veggie bars before. They look absolutely awesome!
As for the sugar cookies, sorry you had such a difficult time. Maybe they just needed a bit more flour? There’s nothing worse than trying to work with sticky sticky dough.

Gotta love a good pump instructor 🙂 When I first started teaching, I tried to think back to all the instructors I’ve loved and what it was about them that I loved. I think this helped guide my teaching!! Bummer about the dough! But the results are fab! The mickeys are so cute.
