Yogurt Blend

After resting all day, I am feeling a little better tonight. I think I drank gallons of water, probably ate a whole bag of clementines and drank Emergen-C every hour. I’ll do what it takes to get better. I am determined.

I ate soup all day but the most exciting thing I ate was my afternoon snack. I made it fancy because it’s the end of pomegranate season for me. Remember the 2 boxes of pomegranates I received? They are all gone now.  I froze plenty of arils so that I can enjoy pomegranates all year long.

Yogurt with POM and Pistachios

The tangy yogurt and the burst of pomegranate juices along with the crunchiness of pistachios is quite a delicious blend.

  • 1 container Chobani plain yogurt
  • 1/2 cup fresh pomegranate arils
  • 1/4 cup pistachios
  • 1/4 cup sweetened coconut
  • Optional: Drizzled with agave or maple syrup

I wanted more crunch so I added Quaker squares too. Why not?

I made soup tonight. The soup included coconut milk, sweet potatoes & kale.

Topped with greek yogurt to substitute for sour cream and peanuts. A sweet and salty combination. I will be posting the recipe soon. Stay tuned.

Kale is delicious in soups. I didn’t know that, now I do 🙂

Now with all these superfoods and nutrients I’ve eaten all day, I’m hoping it will help heal me 🙂

    I saw Emergen-C at TJs the other day and I almost picked it up but it was about $10! I think. A lil expensive for my college budget 😦 Does it really help?

    • Hi Squigglefloey, hope you are feeling better. Sorry for the late response on this. About Emergen-C, I like taking it as an additional vitamins and I take it often when I am sick.

      I’m not sure if it helped or not, because I was also taking regular vitamins. But it does give me energy.

  7. Feel better! I’ve been eating a lot of soup too, not because ‘m sick but just because it’s easier, healthier, and lighter than all the holiday food from the last couple of weeks!
