I am addicted to roasting vegetables lately, especially broccoli. I put a little garlic gold oil mix, plus a little salt + pepper. Roast it on 350 until done, around 20 mins. I like to make so it’s still a little crunchy.
Then leftover Honey Baked ham with Laughing cow cheese on bagel thins.
Tada….vegetables with leftover party food on the side.
Wedding Planning
Now that the holidays are behind us, the wedding planning has picked up and is now in full swing.
I haven’t really felt any stressed during my planning yet, I have it easy in that we chose to do a destination wedding. While it has it advantages, there are a few disadvantages. You see, I like knick knacks and I love sentimental things. I want to bring A LOT of stuff to Puerto Vallarta for my wedding. But there are some challenges when you are limited with your luggage space and weight and especially going thru customs. I need to keep it to a minimum, so that we don’t stress out travelling to our destination.
I keep reminding myself that even without the extra things I want to bring for the wedding, getting married at the beach surrounded by family and friends is all I really need at the end of the day.
Here’s a glimpse of what my wedding day will look like. I have it printed and posted it so I can see it everyday. It is so peaceful and it helps keep me grounded. It serves as a reminder of what the day will be all about.
I have been gathering information and pictures to send over to my wedding coordinator in Puerto Vallarta. This week’s project is flowers.
I want tropical, but also romantic which to me means orchids and flowers with soft petals. My favorite one in this picture is the middle one on the bottom. So colorful! I hope the florist can re-create it.

Roasted veggies are the best. Have you done parsnips? Those are awesome too. All of those flowers are super pretty. I have a million favorite flowers including hydrangea, callas, thistle, bells of ireland (more of a green)….

I have really found a love for roasted veggies too! I love any kind of mix with carrots, potatoes, parsnips, squash, etc. So tasty!
Those flower are gorgeous girl! You will have such a beautiful wedding =) I went very simple for my wedding with deep red roses, calla lillies, and lots of greenery. I had small bundles of greenery tied together with ribbon on each pew during the ceremony. BUT I love hydrangeas and orchids as well.

My favorites are the tiger lilies (in pink and white) they are what we used for my grandmother’s funeral although a sad occasion I can still look at them with awww.

My favorite flower is a calalily. It was what I used as my bouquet for my tiny wedding ceremony. Le sigh.
