I noticed today’s date is 1.11.11. A lot of brides try to make their wedding date a unique one, so I won’t be surprise if there are a lot of weddings happening today.

Slow Things Down

One of my new year’s resolution was to slow it down. Most of the time I rushed thru my day and at the end of the night, when I reflect on the day’s activities, I sometimes feel that my day is so busy yet, I don’t think I’ve accomplished anything. Or maybe I accomplished a lot but I don’t remember because I’m rushing all the time. How could that be? How could I be busy and yet not have anything meaningful happened? I really needed to slow it down.

Today I woke up early so I can make french press coffee and take my time drinking my coffee. I’m usually on auto-pilot on mornings but today I made sure I paid attention to everything I was doing, so I can appreciate my day.

My sister gave me 100% pure Kona coffee from her trip to Hawaii. You can really tell when you are drinking good coffee, from the aroma to every single sip, it’s just a different experience.

When I headed out to go to the gym, I noticed the sunrise and the beautiful colors in the sky. Instead of taking “just” a mental note, I grabbed my camera to take a picture of it. Click, 1.11.11 in the books!

Seeing the sunrise, made me day dream about Hawaii at the gym.

Once I started my workout, day dreaming ended because my workout really required I stayed focus.

My current HIIT workout is challenging but in a good way. It stops me from messing around at the gym. Running indoors on the treadmill can get boring if you do it all the time, this workout does not mess around. I love it!

30 mins ~ 2.5 miles~ 280 calories burned~ 160-192 range on my HRM.

 

I came home and prepared my 5 minute breakfast. I save time in the morning by making a big batch of oatmeal good for 2-3 days. Today,  I heated the cooked oatbran on stove top + almond milk + chocolate protein powder. Ready to eat in 5 minutes.

Topped with nut butter + sweetened coconut chunks (sweetened with maple syrup)

A balanced breakfast with carbohydrates, protein and healthy fats.

I packed my lunch before showering. I usually pack my lunch the night before but I got sucked into watching Gossip Girl last night. Drama. Drama. Drama on the show!

My favorite salad combination as of late.  I go thru phases of favorite salad combo but this has one stuck for awhile.

  • Greens (I like spinach and lettuce mix combo)
  • Shredded carrots (I use a peeler to make carrot strips. I like the crunch)
  • Fresh crunchy apples + dried cranberries
  • Feta cheese
  • toasted walnuts (toast them first for maximum flavor)
  • vinaigrette salad dressing (I used Trader Joe’s non-fat vinaigrette)
  • Lots of crunch with every bite.

    The day is only half over and I am already feeling accomplished!

    What is your favorite salad combo?

    Please tell me as I need a good one to try after eating this salad for 5-6 days already. I will definitely keep this on the salad rotation but I need variety.

    1. It is nice to slow down and really appreciate each day! The sunrise looks gorgeous. That is one awesome salad. I really love dried or fresh fruit in salads. And I love love love either goat or feta cheese. Nuts or sunflower/pumpkin seeds also add a great crunch

      yes definitely slow it down if you can’t remember you don’t want to lose something that can be memorable but although when you are on a busy schedule that experience is something to reflect once you are home and relaxing.

      I love that salad combo especially with apple I tend to make a similar one just with mesclun greens no cherries but sun-dried tomato, candied pecans, garbanzos and artichoke hearts with a balsamic Vinaigrette.

      It’s so delicious.

      and yes I saw it on MSN about that unique dates connection to weddings. I have a friend who got married on 07.07.07 that was the best.

        I forgot to add that I use a fuji or Gala apple or pear with that salad.

      • I’ve never had sun-dried tomato or artichoke hearts my salad, at least not the ones I make at home. Thanks for the ideas.

        I have canned ones at home, hopefully those will work.

          Make sure the Sun Dried Tomatoes are the ones that are marinated in oil and julienne cut Trader Joe’s sells it. I use Balsamic Vinaigrette.

      Fave salad combo is spinach, black beans, chix, salsa, and guac! Veggies too! Its actually one of my fave combos I have so many!

      I loe that you have his and hers too, yes we make it work as well, we eats so different than eachother but it works ; )

        Your salad combo sounds good, a Mexican type of salad. Do you use canned guacamole? Which one do you recommend? I haven’t tasted any good canned version. We make it fresh but we don’t do it often.

    7. I love apples, cranberries, pears, walnuts, feta cheese, spinach and tomatoes. It’s such a delicious mix together.

      I like the goal of slowing things down. I have the same problem that my day is often way to rushed for my own good.

      My favorite salad combo?
      Spinach, dried cranberries (always a good thing), almond slivers (slices?), and goat cheese. Topped with Annie’s Goddess dressing. AMAZEBALLS.

    10. Delicious oatmeal and salad! My favorite salad is something that has mexican ingredients such as a taco salad. I like using ground turkey, taco seasoning packet, lettuce, tomatoes w/green chilies, and maybe some green peppers thrown in there. Yummy.
