Mango Coconut Tropical Shake

Last night, Chris and I went to his work event at the aquarium. It was windy and raining the whole night so we were wearing our rainy day clothes.

We were served catered Italian food for dinner and we dined next to the fishes.

Attending events at the aquarium is fun because we get to enjoy the exhibits at night and eat by them too.

After dinner, we enjoyed some mini baklava and chocolate desserts. Everyone enjoyed them, but I found the bottom half of the baklava to be too sweet. Filled with plenty of butter and sugar. I wonder if baklava recipe can be lightened up and still taste delicious?

After the event, the rain had picked up and we could hear the crashing waves from the ocean.

The drive home was a little stressful because of the rain and wind, there were branches on the road so we kept changing lanes.

I had weird dreams all night, probably caused from the anxiety I was feeling last night 😦 Or maybe because there was a full moon last night?

I slept in this morning thinking it was still raining, but alas, the skies cleared and I was able to fit a quick run around the neighborhood.

After 35 minutes and 3.5 miles, I was back home and made myself a protein shake.

Mango Coconut Tropical Protein Shake

  • 1 scoop vanilla protein powder (30 grams)
  • 1/2 cup almond milk
  • 1 cup frozen mango chunks
  • 1/2 cup ice & 1/2 cup water
  • 1 tablespoon coconut extract

My sister had a taste of my delicious glass of tropical bliss and requested one too.

Since she didn’t want any protein powder, I added a very ripe avocado instead and a dash of stevia for sweetener.

Her version was good too but my cup that included protein powder is definitely more creamy.

I really liked the mango + coconut mix. I have a feeling this combination will make into my oatmeal soon. 

Lunch came around and I made chicken feta wrap.

The wrap included whole wheat tortilla, roasted chicken, fat free feta cheese and Trader Joe’s original hummus and mustard.

On the side, a bowl of sautéed peas and bok choy.

I have lemon + dates oatmeal bars baking in the oven right now. This batch of snack bars is for the fiance, he loves lemon flavored treats like I love coconut.

  1. J & I both LOVE aquariums….so this event sounds spectacular! I think it should be your next baking project to coming up with a lightened up version of baklava :). The smoothies sound so tasty- tropical!

    • What’s your favorite aquarium? We love the Monterey Aquarium at Monterey Bay in Northern California. We have spent days exploring that place.

      I don’t have gentle hands so from my experience in the past, me and phyllo dough don’t get along, lol! I think I might give it a go with phyllo dough again soon.
