First, thank you for all the get well wishes from the last post. My eyes are doing much better. It just a matter of time before my cornea heals completely.
My nephew Jonah turned 2 weeks old yesterday. He makes a lot of facial expressions already and I try to capture it each time I hangout with him.
There’s nothing like a moment when a baby smiles at you, it just takes all your worries and stress from the day away.
Zumba
This morning I took Zumba class. I really love taking that class and wish my gym offers more classes. It’s a popular class among the members because it’s always pack.
I enjoy dancing a lot. Many, many years ago, I used to dance Tahitian and Hula. I loved the drum beats and all the different hip moves. Taking Zumba classes brings me back to my previous dancing days.
I can’t help but used my hula hips when I dance salsa during Zumba classes. For some reason, my hips tend to do hula moves and I try very hard to stick to salsa when in class.
In order to raise my heart rate, I modify the steps in class and try to make it more high impact. I jump harder, I shake my butt faster and it works because my heart rate monitor went up to 85 this morning.
After my dance performance at the gym, I enjoyed sweet potato protein pancakes when I got home. Topped with maple syrup and flaked coconuts.
Delicious pancakes like these is the one of the reasons why I’m excited to eat breakfast every morning and why healthy food does not have to be boring.
The pancake batter wasn’t mixed too well and I ended up with sweet potato chunks in the pancakes. Another way to add texture to the pancakes.

We will be doing some home improvement projects tonight and this weekend. DIY projects are fun, especially the ones you can finish in a few days and enjoy the fruits of your labor.

That is so cool that you can do the hula! I have the opposite problem as you in that I cannot make me hips move in the hula way. LOL. I would love to go to Hawaii to learn! ๐

Yeah I love the coconut in the name. I thought about using it in my own somehow, but oh well.
I wish I could do any kind of dance! I always end up looking like Elaine from Seinfeld….not good if case you’ve seen it. Eek!

What wonderful pictures of your baby nephew! Mine is only a few days old now – LOVE HIM. I’ve never hulaed – I’ve heard it’s SO hard and a great workout!

Yum, yum, YUM! I am the same woman that is making the protein scones. I also tried this recipe for sweet potato pancakes. They were AMAZINGLY yummy. I used the maple syrup, coconut topping. They tasted like gourmet food and I was very energetic afterwards instead of the usual crash I get after eating pancakes. Thank you for this great recipe.
One problem I encountered was that the pancakes would fall apart when I was flipping them until I added a little bit of oil spray into the pan. Typically when I cook pancakes I don’t use any oil at all. I have a nonstick pan and that works well. But with these pancakes, when I tried to do that and they fell apart, just a little spray of oil helped to make them stay together.
Really amazing yumminess! I am going to make these again and again. My mom wants some too!

I do use Pam spray to help them not stick to the pan. I make the pancakes about the a tad bigger than my palm size, so I can 4 pancakes with the recipe. They are smaller and easier to flip on the pan too.
I’m glad you are enjoying the pancakes. I have been eating them at least once a week.
