This week feels like a normal week for me, as normal as it can be with being only 23 days away before we leave for Mexico.
Last week when we celebrated back to back celebrations, I lost track of my days and I lost count of desserts plate I’ve enjoyed.
So this past Sunday, I did what I normally do on Sundays and did some food prep for the week ahead. I really love this routine. It’s calming to be in the kitchen, chopping, prepping and cooking.
I cooked a bag of edamame. I have been snacking and popping these in my mouth a lot lately. I love adding it in my salads too.
I roasted a whole bag of broccoli, always with Garlic Gold oil.

I prepped my salads ahead of time. I pre-made 3 of this huge salad, one to eat right away and 2 for lunches during the week.
I made 4 servings of tuna salad mixed with chopped celery, mayo, mustard and little bit of sweet relish.

27 days before the wedding
(23 days before we leave for Puerto Vallarta)
With last minute wedding planning, my time has been spent doing the following:
1.) Logging countless hours online emailing back and forth with the wedding planner. Sending attachment and editing pictures to include instructions. Sending detailed instructions is very time consuming.
2.) Placing online orders for last minute items.
3.) Tracking and accepting packages at home. Unpacking, assembling and sorting them out. Then I will be packing them again for Mexico.
4.) Creating plenty of list: Travel Packing list, Day of the Wedding list, Honeymoon to-do list & creating lists for guests.
Today is my final fitting for my wedding gown. I’m excited to finally see my dress again. I was just looking at the pictures from when I purchased the dress. I hope I am still in love with it as I was the day I put it on. That was last year and it just seemed so long ago.
Now that we are down to a few weeks of wedding planning, I wished time would slow down a bit so I can have more time with the planning. But then at times, I wish I can flash forward to my wedding day already, because I am ready to get married.
I have all the Royal Wedding festivities saved on my DVR. I like to watch it again and again because it makes me feel good watching William and Kate (they are around my age) on their wedding day. So much love, L.O.V.E is definitely in the air!
I loved the fact that with millions of people watching them, they shared a joke between each other at the altar. If you read his lips, the first thing he said to her was “You look beautiful”.
It was worth waking up at 1am (to set the DVR) and then wake up at 6am to watch it.
Nearing the wedding date is bittersweet…you don’t want the planning to end, nor the wonderful anticipation, but at the same time you want to experience that magical day.

I love prepping ahead of time too! Edamame is awesome and I haven’t purchased any in a while and need to. Your salad sounds perfect, but I’d swap the Tuna for Crab. Gorgeous. SO awesome that your wedding is so close-yayyy

I’m still 5 months away, so I’m kind of at the lull stage…not much to do but wonder if I’m not doing something I should be! 🙂
I love Edamame I have it all the time in my salads and just like that. Yummy.
I make this Raw Salad mix and I put it on top of Mesclun Greens so I like Salad on top of Sald.
My Raw Salad consists of Avocado, Raw Corn (off the cob), Jalapeno, Red Bellpeppers and Basil (cilantro is good too) and Lime/lemon and toss.
It’s so delicious the lemon or lime creates a slight creaminess that I don’t have to add dressings it’s refreshing and a great summer treat. = )
