It was a scorcher today and I wished I could have eaten ice cream for all my meals, but alas, I need nutrition so ice cream will have to wait, maybe for dessert later.
Lets get straight to it…these are my eats for today.
I had a soupy oat bowl today, I was a little too happy pouring the almond milk. I tried adding chia seeds to help thicken it out, but it only helped a little. Plus, it is hot, hot, hot around here and I didn’t want to stand in front of the stove cooking any longer than I have to.
Picked up fresh strawberries at the farmers market this weekend. I am trying to get as much fresh strawberries as possible before we switch to frozen kinds when fall comes.

I packed a huge salad for lunch.
Refreshing salad to help cool me during lunch. Chris thinks it’s weird to have fruits in salad but I love it. The sweet flavors from mangoes and strawberries + crunch from carrots and almonds just mixed together well for my palate.
I have been eating this salad combo several times a week. I would serve this to friends, I think they will be surprise how tasty it is.
This cool salad is best paired with a light honey mustard dressing. I love Annie’s lite dressing.
Part two for lunch is a hummus wrap with melted cheddar cheese. Simple but tasty.
For snack, I had an apple (not pictured) and a new-to-me snack bar. The folks at Taste of Nature sent me some samples of their snack bars made from Canada. Taste of Nature is a manufacturer of 100% certified organic, vegan, Kosher and non-GMO snack bars. Every ingredient they use comes straight from nature.
The bars are sweetened by agave, which I love and like to use for baking. The bars are chewy with crunch texture from the nuts and crispy rice. I love that it is lightly sweetened.
While I thought of what to make for dinner, I snacked on a handful of pretzels dipped in nut butter jars.
Dinner was thin crust pizza.
I just threw all of this in a rush. I had leftovers planned for dinner but I wasn’t feeling it so I try to create a meal from what I had.
New Flatout fold-it flatbread, topped with pizza sauce, meatless sausage, cheese and fresh basil from our garden. Btw, I’m so proud of me for not killing my garden
The flavor was good but the flatbread didn’t get crispy. I popped it in the toaster oven but I think I will try the oven next time.
Now I’m off to enjoy my cup of tea and some dessert. I haven’t decided yet what dessert I’m going to pick-out from the freezer.

We’re opposites: It’s getting pretty cold here in Boston already but I’m still hanging on to overnight oats 🙂 But also with fresh strawberries!

it’s crazy how warm it’s been! all i’ve been craving is smoothies and ice cream. I think today it is finally cooling down a bit!

The temps have cooled down here nicely! I hope they are good where you are as well. I can’t stand the heat so hopefully we’ll have a decent fall.
