The first weekend of the new year was a fun one. After all the parties and celebrations from the holidays, I like that our calendar for January is not too busy.
It’s time to re-group and re-charge, both mentally and physically.
Friday Night
Our weekend began with pizza and movie night on Friday night. This thin crust pizza that I got from Costco was very flavorful. I like pizzas that have a lot of sauce and veggies, instead of being overloaded with cheese.
Served with shredded brussels sprouts sauteed in olive oil and topped with maple syrup.
Also on the side, I made salad dressed with tahini sauce, balsamic vineger and feta cheese.

We watched a movie eating fresh baked cookies…..and wearing our snuggies 🙂
Saturday
We went on our training run at the park in the morning. I kept it easy and took walking breaks.
I’m just recovering from being sick last week. I was just glad to be out and running again.
The rest of the day was spent baking in the kitchen. We are doing a local bake sale with our friends and family for our half marathon fundraiser. Cher got a ton of bake sale orders from her co-workers. The picture below was just half of the treats I made.
Baking with a deadline might sound stressful, but anytime I’m baking, it’s such a stress-reliever.
Sunday
We are having beautiful weather right now, it’s cold but it’s sunny and clear.
So naturally, we went hiking to enjoy the outdoors.
Chris was working all weekend so I made a date with friends to go hiking.
One of my goals this year is to hike at least once a month. Check!
I think the hills grew over the holidays. My heart was pounding by the time I got to the top.
I put my favorite puffy vest in the washer and it didn’t look the same after it came out. It’s all bent out of shape, I took a picture to see if it looked damaged?!? It still keeps me warm, so I guess it’s still functional.
Later in the evening, Chris and I did our Sunday routine of going to Disneyland.
It was the last day before all the holiday decorations are taken down.
One last holiday fireworks.
One last look at the Red and Green castle.
One last snow on Main Street.

P.S. A big and spanking new bakery opened on Main Street. I can’t wait to check it out.

That pizza looks really good! I always load the veggies whenever I do eat pizza. I figure, I better get some nutrients in if I want to eat pizza and indulge a little. 🙂
