It has been that kind of week where I am just craving carbs and can’t get enough of it. When I do eat a lot of carbs, I make sure that I eat healthier carbs by choosing whole wheat or whole grains when I can.
For breakfast, I made pancakes using Kodiak Pancake mix.
Eating pancakes alone don’t fill me up.
I add fruits, nut butters and chia seeds to add healthy fats and protein. This kept me full until lunch time.
Chi chi chia seeds taste really good as pancake toppings. They add crunch.
For a late lunch, I headed out to Panera Bread and ordered a hot soup and warm bagel.
It rained this week, and eating soup was on my mind. I ate small serving of chicken soup with a slice of fresh bread.
Cranberry Nutty bagel served with honey walnut cream cheese was the second part of lunch.
I packed plain greek yogurt + frozen pineapple bits (my favorite from Trader Joe’s) for afternoon snack. I will definitely be packing this snack more often but I will add some sweetener because it was too tart for me.
I did a lot of food prep this past weekend, so it has helped making dinner every night a breeze.
Since I washed and chopped all the vegetables for the salad ahead of time, all I have to do is assemble it when dinner comes around.
I also marinated the tofu and chopped all the vegetables the night before. Tonight, I lightly fried the tofu and grilled the vegetables on the stove top.
One of my favorite meatless meals is this Crispy Garlic and Ginger tofu wraps.
I like that I can pile on the roasted peppers and I usually pile it on high. It’s a great way to eat a ton of veggies in one dish.
After dinner sweet treat is a big mug of hot chocolate. I am enjoying each sip while watching Modern Family with Chris on the couch.

I am really looking forward to this weekend. We don’t have any plans so I just want to lounge around and relax. Do some gardening, baking, watch DVDs or maybe a romantic movie and read my book.

i totally have that sentiment when it comes to pancakes. i always think they should make me super full when i eat them – but they ever do. for me, it is a MUST to add some extras especially with protein. yours look great!
I just bought tofu at the supermarket the other day. I’ve never had it before and have no clue how to prepare it. I think I might try your recipe. It looks and sounds really good to me. 🙂
I love carbs, I shouldn’t but I do. I haven’t tried the kodiak pancakes yet, but I heard there wonderful!

I don’t eat that many carbs anymore, but boy do I sure miss them! I try to load up more on veggies, fruits, & protein!
