Easter Fun

We had a fun time this Easter weekend with the family.

Sunday was my sister’s actual birthday so we headed over to her house for some BBQ celebration.  My sister is going on a week vacation with my mom, so we kept the food simple and tried to use up every food they had left in their kitchen.

I made mini-corn dogs.

Even though I made the error of using coarse polenta instead of corn meal, they still turned out well and everyone loved eating them.

I made cupcakes too. I made them at home and brought them to the party.

These Easter themed cupcakes were inspired by Martha Stewart. I made coconut cupcakes, frosted them with buttercream and then topped with toasted coconuts. I then added chocolate eggs to dress them up.

My 1 year old nephew, who has just started walking, was the life of the party. My sister will have her hands full on this one 🙂

I tried to get a picture with him, but this is the closest I could get him to stay put. He either wanted to climb on top of me or jump out.

  3. oh my gosh, at first i thought the corndogs were actually what you turned into cupcakes. now that would have been the ultimate sweet & salty dessert!

    • love the way you think….it can be a cupcake, but I’m not that creative in designing a cupcake that looks like a corn dog, lol!

      However, those corn dogs do taste sweet and savory. They were a hit.

  4. Oh wow your nephew is so big- walking already! I remember when he was born. Lea you have to come see baby JD. He is getting so big- 14 weeks already. Hope you are doing well.

    • Lora….miss you! I hope I can visit this summer, I am missing out on baby JD and it makes me sad 😦

      I want Cher and I to drive down and spend some time with you.
