Weekend Things {1}
How’s the new year treating you so far? My weekend was relaxing. I actually took it easy because I had a strained muscle on my stomach last week.
– Cher and I watched the movie “This is 40”. I was entertained and the movie had some funny moments, but it just surprised me that it was 2.5 hours long.
-Spent Sunday night at Disneyland, it was our last day to enjoy the holiday decorations and fireworks. Christmas if finally over and I think my Christmas spirit is gone 😦
– Took down all the holiday decor in the house. It’s probably the least wonderful time of the year.
– Playing with yellow and grey chevron prints. I love really love this color combo, it just looks beautiful and I love that it’s neutral. I’m going to incorporate these 2 colors in the nursery decor.

I have a new strategy in kitchen these days. Whenever I see a recipe or cooking show, I find myself asking “Can I make this ahead of time?”.
Maybe it’s my brain trying to get ready for mommy-mode? I just know that I won’t have a lot of time in the kitchen or energy to make the meals that I do know after the baby is born.
Recipes that have interest me lately are casseroles, freezer friendly food and even better when they are one pot meals.
I found this recipe for breakfast casserole that includes egg and spinach. I pictured myself making it on the weekends and eating it throughout the week. Love that it’s filled with vegetables, so extra bonus for having vegetables for breakfast.
This is a recipe that I will be making in the future again.
Spinach and Cheese Breakfast Casserole
(recipe adapted from Kalyn’s Kitchen, serves 4)
Ingredients:
8 eggs
salt and pepper to taste
2 green onions (finely chopped)
1 cup grated low fat cheese ( I used shredded mozzarella cheese from Costco)
4 oz. cottage cheese (optional, this adds creaminess in the dish)
1 bag of spinach (cooked and sauteed in olive oil)
Directions:
- Preheat oven to 375.
- Spray 8×8 casserole dish with nonstick spray or olive oil.
- Grate cheese and set aside. Sauté the spinach in a small amount of olive oil for 3-5 minutes.
- In bottom of casserole dish, layer the spinach, green onions and cheese. Mix eggs with salt and pepper until whites and yolks are well combined.
- Add cottage cheese to egg mixture if using.) Pour eggs over spinach/cheese mixture, then stir gently with a fork so that all the ingredients are evenly distributed in the eggs.
Bake until eggs are firmly set and top is lightly browned. About 20-25 minutes using my 8X8 size pan.

This is the first time I’ve made an egg casserole and I can’t believe I waited too long.
This dish reheats well. I just put it in the microwave in the morning on my way to work and I also added it on top of my quinoa bowl for lunch for added protein.
The veggie/cheese and meat combination is endless. I will be making my next batch soon.

I love a breakfast bake! Looks great. I saw that movie, too – good but yes, too long or a comedy, right? Surprising! And, I’m not anti-f-bomb but come ON, it was like ever 5 seconds!

I’m surprised to hear This is 40 is that long, but I’ll still plan to watch it 🙂 Breakfast casserole sounds great, and I love the addition of cottage cheese!
