Pregnancy Babble – 3rd Trimester
Now that I am well into my third trimester, I am seeing more changes in the last few weeks with my body and how I’m feeling than I did the entire pregnancy.
One of the things that is happening lately is the lack of sleep. I can go to sleep fine in the evenings, but it’s the midnight potty breaks that usually turns into several hours of tossing and turning, and then getting up late groggy and barely making it to work on time. It’s not a good cycle.
When I don’t get enough sleep, I get tired easily. When I’m tired, I can’t concentrate and get anxious. When I’m anxious, I get stressed. When I’m stressed, I just become an unhappy person. But I’m working on this and trying different things to help solve the problem.
I am watching less TV or none at all during the week nights. I listen to soothing music on Pandora while I cook or cleaning up. I stay away from my laptop if possible (thus the lack of postings). I’m just trying to help my body relax in the evenings. Hope it gets better next week.

One of the foods that I am craving during my pregnancy is cheese. I am loving cheese everyday.
I am trying to balance my love of cheese and am trying to incorporate vegetables to whatever cheesy food I’m going to eat.
I had the plate below for lunch this week. I enjoyed a big slice of cheese pizza, but I also enjoyed grilled vegetables on the side.
More cheese on the plate…but also more vegetables to go with it.
It’s hard to balance the cravings and also making sure that I get some good healthy food in my body. I’ll be happy with just a block of cheese, but I really make an effort to balance my food selection.
Recently I made these Greek Spinach crescent rolls and they turned out more than I expected that I made them twice in one week. Plus, I get to eat cheese and also add vegetables at the same time.
I bought a Costco size bag of shredded mozzarella cheese and have been looking for ways to use the giant bag of cheese. A pregnant lady should not be left alone shopping at Costco when she’s craving cheese 🙂
This dish was really easy and quick, it can be ready in twenty minutes included prep and cooking time.
You will need to mix chopped spinach, feta cheese, mozzarella cheese, black olives, salt & pepper and red pepper flakes.
Unroll the crescent dough and divide into triangles. Using a spoon, place tiny heaps of spinach mixture on the wide part of the dough triangle.
Roll them up individually. Place on a greased cookie sheet or silpat and lightly brush each roll with the egg white.
Bake for 15 minutes or until golden brown.
Greek Spinach Crescent Rolls

Ingredients
- 1 tube Pillsbury crescent rolls, 8 ct
- 2 oz crumbled feta cheese
- 2 oz shredded mozzarella cheese
- 2 oz fresh baby spinach (about 1/4 of pre-washed bag), chopped
- 1 oz black olives, finely diced (*this ingredient is optional)
- 1 egg white, beaten
- red pepper flakes (optional)
- dash salt and pepper
Directions:
Preheat oven to 350.
Begin by chopping the spinach and olives and putting them in a large mixing bowl. Add the feta, mozzarella, red pepper flakes and salt and pepper. Toss thoroughly and set bowl aside.

These are so much fun! A mini version would make an awesome party app. Hope the sleep gets better!

Those rolls look delicious – YUM! I went to Costco last night a little hungry – do not recommend that either. Hopefully you can get the rest you need:) Happy Friday!
in college we used to make our own pigs in a blanket with crescent rolls. i can’t wait to give these a try!
