Lets do {express} lunch – Quinoa Bowl

I’ve missed this place, this blog is my creative space and I miss it.

It has only been a month since I’ve given birth and already I feel like I am starting to see the flow and rhythm of having a baby at home. Don’t get me wrong, I am still adjusting, but I do feel like each day is easier than the last.

One of the things I do for MYSELF to stay sane (and honestly to gain a little bit of control) is to make sure I have healthy food readily available at home. I like to know that no matter what the day will bring, whether the baby will be in a good mood or will be cranky all day, there’s one thing less I have to figure out, and that is what to eat when it comes to meal times.

I am exclusively breastfeeding right now and I have never been so hungry or thirsty in my life.

I am amaze at the quantity of food that I am eating, but I also want to make sure that I eat balanced meals.

For a month now, I have been making this quinoa bowl for lunch. It’s simple, has lots of flavor and delicious.

If you need a new lunch idea, I would suggest trying this combo. You can make everything ahead of time and just assemble the bowl daily.

In order to make this lunch happen every day, I boil a dozen eggs every weekend to eat throughout the week.

This lunch bowl includes:

  • quinoa (I bake a batch ahead of time)
  • black beans (optional, Trader Joe’s brand is my favorite)
  • boiled eggs
  • half avocado
  • salsa
  • organic sour cream or greek yogurt

Healthy grains, protein, healthy fats and dairy. Lunch is served!

  1. It definitely does get easier every darn day! Keep on trucking. What a delicious lunch. OMGOSH I remember how thirsty I was during breast feeding. I felt like I had no moisture in my body (dry skin, hair etc)

  2. And we’ve missed you! I’ve been eating eggs, avocado, and sriracha so often, so I’d love this bowl!
