I am still trying to figure out this “working mom” thing. I’ve been in this role for about three weeks. My day starts at 5am and usually I face plant onto my bed around 10pm. The day just goes by so fast and there aren’t enough hours to do all the things I want to get done. Sometimes I wonder, what did I do with my time before the baby? Ha.
I’m trying to be realistic with the things that I can get done during the day. But one of the things that are non-negotiable for me is to make sure we have at least one healthy meal a day, preferably during dinner. I can count in one hand the times we’ve had to resort to eating out or eating fast food since the baby was born. I’m proud of that. I just feel better when my family eats healthy. We have energy and we are happier.
I typically have a Sunday food prep routine to make our weeknight meals happen faster but lately, our weekends have been busy and I haven’t had time to prep. That’s where Fresh & Easy comes in. My local market is on my way home so it’s very convenient for me. I grab a few items from their ready-to-bake aisle and their premade veggies and I’m in and out of the market very quickly.
I love that they showcase the items on sale for the week in the front. Since I am always in a hurry(trying to be home before baby goes to sleep) and don’t have time to look over their weekly ad, having this in front of me makes it so much easier and I can plan our dinner menu based on what’s on sale for the week. So easy!!
This week I picked-up Chicken Parmigiana Bake and lots of veggies. I called the husband to pre-heat the oven before I got home and dinner was ready very quickly. As soon as I get home, I pop it in the oven and we are ready to eat in 30 minutes. It’s so easy.
They are conveniently packaged in containers that can be used in baking them and also they are pre-portioned. That’s perfect for me and my husband. They also have bigger trays for bigger families.

Dinner is served! —and since I picked-up items that were on sale this week, I was able to make this dinner for 2 at a good price. My husband loves his protein, while I love my veggies.

Definitely a great crazy-night dinner!! Trying to balance everything is always a juggling act. I swear it gets easier as they get a bit older!
