current favorite / spinach prosciutto salad

It’s so great when I find a salad combination that I like so much because it makes grocery shopping so much easier, especially when a salad can satisfy me for lunch.

I am on week three on having this salad in our weekly menu and most likely I will be eating this for the rest of the month. Next month I will look for a new salad combination (hopefully I will love it as much as this one)

I make this salad for my work lunch. It’s easy to pack and assemble and the ingredients are simple but goes well together.

I get all the ingredients from Trader Joe’s, where I do most of our grocery shopping. And the dressing? just balsamic vinegar and olive oil.

Spinach Salad with Prosciutto

Ingredients:

  • spinach (a lot!)
  • tomatoes (I used cherry tomatoes)
  • prosciutto (smoked kind if you can find it)
  • feta
  • cooked quinoa
  • olive oil
  • balsamic vinegar
  • pepper

Combine as much of the ingredients as you like, it’s very flexible, so make it according to your taste.

Just mix all the ingredients together and then toss everything with olive oil, balsamic vinegar & black pepper.

 

This is how I serve the salad when I’m having it as my meal to bring to work for lunch. I include quinoa for more protein and staying power.

When we are having the salad as our side, I keep it very minimal and don’t add too much feta or prosciutto and exclude the quinoa.
