{current favorite}–chop chop salad

 

I have a current favorite salad. I eat this when I don’t get a chance to pack my own lunch, and these days, it has been happening more often.

I asked the restaurant for all the ingredients so I can try to replicate it at home. What I find unique about this salad is the combination of goat cheese and dates. Yes, the perfect blend of creaminess, sweet and saltiness.  The dressing is ranch with fresh chopped cilantro mixed it, but I’ve also requested vinaigrette with it when I want it to be extra light.

The fresh summer veggies and grilled corn are also delicious. I just love it. period. I have eaten this probably about 10+ times in a few months and I’m not close to being sick of it, so that’s good. I have brought this to potlucks and shared with my girlfriends for ladies night and everyone loves it too.

Chop Chop Salad

Ingredients:

  • mixed lettuce
  • pulled chicken
  • avocado
  • grilled corn
  • dates
  • toasted pumpkin seeds
  • radishes (sliced very thin)
  • sliced raw beets
  • goat cheese
  • roasted tomato
  • toasted bread crumbs

dressing:  ranch with fresh chopped cilantro mixed in
