I tried a new cupcake recipe and I’m glad I found this in time for summer. We have a lot of social events we are looking forward to this summer, which makes me excited to see our friends and family, as well as bake new treats to share. I love experimenting in the kitchen, and being able to share them.
This cupcake has an Oreo cookie base, a vanilla cupcake mixed with Oreo crumbs and topped with frosting with both the cookie and crumbs.
I got the idea to make an Oreo cupcake from Annie’s Eats, and you can find the complete cookies and cream cupcake recipe on her blog.
I didn’t follow the cupcake batter recipe that she posted because I have my own go to recipes, but I did follow her steps in making the cupcake.
I had a lot of fun making these cupcakes, extra fun eating the broken Oreos 🙂
First step was to separate the Oreo cookies
Place half of the cookie (with the cream still stuck to it) bottom of each muffin liner.
Add crushed oreos to the cupcake batter.
Add the batter to the muffin pan. The cupcake batter recipe I used made 24 cupcakes.
Once the cupcakes are baked and cooled, put icing and crushed Oreos for decoration
I froze the extra cupcakes (without frosting) and they taste great right out of the freezer, they taste like mini-cheesecake to me.
