Wow, it’s already Nov 11, can’t believe it. The first week of every month is always a blur for me, it’s the busiest time at work every month, so the whole week just passes by really quickly. So now it’s the second week and I’m coming up for fresh air and have some time to blog.
I’m excited to share this salad because it was delicious, I served it during our Halloween party. I will be making it again soon for Friendsgiving this month. I love all the individual ingredients and even better when they are mixed together in this salad.
All the goodness in one bowl.
P.S. I was rushing to take a picture before it got dark, so I quickly took it on top of H’s toy truck.
Autumn Chopped Salad
(serves about 4-5, can be easily doubled)
Ingredients
*4 cups chopped romaine lettuce
*1 large apple, chopped
*1/2 cup dried cranberries
*1/2 cup toasted chopped pecans
*4 slices thick-cut bacon, crisp-cooked and crumbled
*2-3 oz. feta cheese, crumbled
*Poppy seed Salad Dressing
*Balsamic Vinaigrette (I used Newman’s Own Light Balsamic Vinaigrette)
Instructions
*On a large bowl, combine all the ingredients or arranged as pictured above. Mix the dressings together and drizzle on top of the salad. Use as much dressing to your liking. (To make 1 cup mixed dressing, I mixed 3/4 cup balsamic & 1/4 cup poppy seed dressing together). Toss and serve
I prepped the salad ahead of time and stored it in the fridge. I soaked the cut apples with water/lemon juice mix to keep it from browning. I added the apples right before serving.
