Curry Roasted Cauliflower with Sweet Peas

Most of the time, I am the one that cooks our meals. I enjoy looking thru cookbooks, magazines and especially blogs for recipe inspiration.

I find it fun to plan ahead our meals for the week and I especially enjoy going grocery shopping. I just love to be around food, period.

But the husband also likes to cook when he has time. Usually, he will come back from a fishing or diving trip and since seafood is best eaten fresh, we usually eat his fresh catch right away, at least within 24 hours.

While he plans how to cook the fish or whatever seafood that is in season, I also brainstorm the side dishes or salad to eat with our meal.

One of my favorite side dish is roasted cauliflower with peas and cilantro.


It’s so easy to make. It’s delicious with grilled fish or any type of seafood that is simply marinated.

The white cauliflower florets gets caramelized and toasted in the oven, while the curry flavor and the heat from cayenne pepper seeps thru its skin.


The sweetness from the peas goes well with the curry.

It also leaves me leftovers for the next day.

I like to eat the leftovers with quinoa for lunch.


Curry Roasted Cauliflower with Sweet Peas

(recipe from Can You Stay For Dinner)


  • 1 head cauliflower, cut into florets (about 4-5 cups)
  • 2 tablespoons canola or grapeseed oil
  • 2 teaspoons curry powder
  • 1 teaspoon salt
  • 1/2 teaspoon cayenne pepper
  • 1/4 teaspoon turmeric
  • 2 cups frozen sweet peas, thawed
  • Fresh cilantro leaves


  1. Preheat oven to 450°. Toss the cauliflower florets in the oil in a large bowl. Add spices and toss again to coat each floret well.  Spread cauliflower onto a foil lined baking sheet.
  2. Roast for 20 minutes, until cauliflower is beginning to blacken and is easily pierced with a fork. Stir the thawed peas with the hot florets on the baking sheet, sprinkle with fresh cilantro, and serve.

Chris cooked a white flaky fish, that was marinated with olive oil, maple syrup and other spices.
