Pomegranates have invaded my life and I’m loving it.
When you are fortunate enough to be showered with pomegranates, then you shall share the wealth and share with thy neighbors. These pomegranates have been and will be shared with friends and family. I’m going to be baking a lot this holiday season and sending my healthy treats and goodies everywhere. Spreading the love.
I am the master of opening pomegranates now. Unlike the first time I opened my very first one, my kitchen looked like a crime scene. After the 10th and then the 20th pomegranate, I finally got the hang of it.

My breakfast this morning was quinoa cooked in coconut milk. Topped with coconut flakes + pomegranate arils.
Then topped with a little crunch from granola.
I made my own sweetened toasted coconut by mixing flaked coconuts with maple syrup. Toasting it until it lightly browned, about 6 minutes.
It’s good to change up breakfast once in awhile, especially with seasonal fruits.
I have been searching for my Ugly Christmas Sweater the last few days. The party is tonight. I went to different stores (Goodwill stores, Kohl’s and Walmart) and I was very disappointed in the selection. The grey wool sweater made me itchy just looking at it but I still tried it on for fun.
Thank you for those of you who commented and sent me online links to ugly sweater stores. We should do a virtual ugly sweater party where readers can submit the ugliest sweater they can find or own. Doesn’t that sound fun? Anyone interested?

If I’m going to another ugly sweater party, I will consider ordering online and I will definitely have more time to buy supplies and make my own. But alas, here’s a sneak peak of my ugly sweater for tonight.
