What I Ate – Almost No Cook Version

I’ve learned to stream line my morning routine and I feel like I’m back to my old self and my active lifestyle.

I’ve consistently made it to the gym first thing in the morning the last few weeks. Woohoo!

One of the things that I’ve done to stay sane in the morning is to do a lot of the prep the night before or during the weekend.

I often make my breakfast pancakes the night before or make a big batch on Sundays. Then I pop it into the toaster oven in the morning for a quick breakfast plate.

The eggs? Cooked the night before while waiting for the pasta water to boil. Microwaved this morning to warm them up.

The night before, I also pack my huge salad for lunch. I’m currently loving tahini sauce + white vinaigrette as my salad dressing.

In order to get a mental break during lunch, I turn off all electronics….cell phone, computer and etc., and read a magazine that has some motivating articles. Today, I read Runner’s World.

I’m back to the work grind for a few hours and then stop to eat my snacks around 4pm. These were enjoyed with a big cup of tea.

Tonight’s dinner was brought to you by Trader Joe’s. I love this combination and these items have become pantry staples.

I call this my 5 minute Thai plate. I put together 1 package of Tuna Red Panang Curry and 2 cups of Harvest Hodgepodge frozen vegetables (defrosted and warmed on stove top) and put it on top of a bed of brown rice.

Vegetables, protein, carbs and healthy fats from coconut milk sauce…..all check!

  2. I agree- prep ahead totally saves me! I need to learn to disconnect and really take a lunch. I usually just work through it…whoops. Its been about 80 degrees here!

    • Yup, that’s exactly what it is. White balsamic vinegar mix with a tiny drop of olive oil. Then I add Trader Joe’s tahini sauce and it makes a great salad dressing. It coats the vegetables and it’s creamy.

      For the white vinaigrette, I just use White balsamic vinegar then mix with a tiny drop of olive oil. Then I add Trader Joe’s tahini sauce and it makes a great salad dressing. It coats the vegetables and it’s creamy.
