It has been a cool summer in Southern California…until now. We actually had rain last month, rain? I know, not very summer like in SoCal.
Summer in late bloom. As the kids around my neighborhood get ready for back-to-school, the summer weather is finally here. This is what I had in mind for summer weather.
I’ve enjoyed my oatmeal for breakfasts but it might be getting too hot for that.
Possibly my last *hot* oatmeal for awhile, or until the weather cools down. Why two spoons? I don’t like to mix Nuttzo and Chocolate nut butter with the oatmeal. I like to lick it from the spoons as I eat my oatbran. Weird huh?
Since I know there will be yogurt parfaits for breakfast in my future, I made my own granola. I haven’t found a granola brand that has the coconut ratio that I want.
Double Coconut Nuts Granola. Lots of shredded coconut, mix with coconut oil, slivered almonds and a few chopped walnuts.
Double Coconut Nuts Granola
- 1 & 3/4 cups rolled oats
- 1/2 cup slice almonds
- 1/4 cup chopped walnuts
- 1/2 cup unsweetened coconut
- 2 tbsp agave
- 2 tbsp coconut oil
- 1 tbsp vanilla
Preheat oven to 300 degrees. Put agave and coconut oil on very low heat until thin. Stir in almonds, walnuts, coconut and vanilla. Mix until they are coated well. Add oats to the mixture and mix well.
Transfer the mixture on a greased non-stick cookie sheet. Spread them evenly. Bake for 10 minutes and then stir mixture. Bake for another 10 minutes or so. Watch it carefully. The mixture will turn brown quickly.

What’s your current favorite granola? What specific ingredients do you look for? I always look for granolas that have coconut in them and also I like granolas with a lot of nuts. I love crunch.

I know what you mean. I like that I can control the sugar content if I’m making them at home.
Last oatmeal!? I would never dream of the day! lol. I have oatmeal every morning and on the odd days that I don’t, I just feel “off” for the whole day and try to find ways to sneak in oatmeal later in the day. I am glad to hear that you are working on your granola for your future yogurts! I personally really enjoy dried black currents or blueberries in my granola. 😀
Last oatmeal…for now! oatmeal helps me feel grounded in my day too, but I was sweating making the last oatmeal I had 🙂 Maybe overnight oats tomorrow.
I’ve never had black currents before. Where do you buy dried currants for your granola?

Love coconut in granola as well..you should put the calorie stats up…I love granola, but can eat way too much..oye ;-/
I don’t like overnight oats, but I love mixing regular oats with yogurt like you to cool it down for summer. So good! I do just mix up the nutbutters though. I make sure to add enough every bite has some. 😉 LOL

Your double coconutty crunchy granola sounds like IT would be my favorite. Honestly, I’ve never really met a granola I didn’t like…well, except for few burnt batches I’ve made myself. I love that you use coconut oil in yours – I definitely need to try that someday soon.

The summer weather is a nice change…I especially love the cool evenings.
I really like granola but don’t like all the sugar that the store brands have. So I make my own little version which is pretty tasty, if I do say so myself!

I love coconut. Love it. I don’t have the coconut butter sold in my area though (but I tried it once and LOVED it). I really like adding coconut flakes to everything. And coconut milk is great too.

I love coconut, oats and nuts–my fav combos! Definitely going to give this one a shot soon. I hate buying store bought granola as it’s high in sugar content. Might add some falls spices, flax and pumpkin seeds to the mix!
